hows your engine mounts? These can cause issues with vibration and knock detection, also non oil filled ones can do it to. A lumpy Cam or noisy valvetrain can also do it.
There is settings to numb the knock aggression down a bit. Ignore time from memory.

ive never had much luck with bosch o2 sensors for narrowbands, especially in commo's, dephi's work much better and have good response time.
Ive had several bosch's out the packet do the same slow response as your seeing.

From what i understand the PCF2100 is a parallel lcd driver? So it's like 7 segment displays i think? So one pin would control for example the ODO to light up, another pin would control the L/100 to light up, then the digits like a normal segment displays. could be connections, could be the cable is too long. Most of the pins should be available on that 2 row header at the bottom of the pic.
